  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 bell peppers, diced
  • 1 zucchini, diced
  • 1 cup corn kernels
  • 2 cans (15 oz each) diced tomatoes
  • 2 cans (15 oz each) beans (such as kidney beans, black beans, or pinto beans), drained and rinsed
  • 2 cups vegetable broth
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, sour cream, chopped cilantro, avocado



  1. Heat olive oil in a large pot over medium heat. Add diced onion and minced garlic, and cook until softened, about 5 minutes.
  2. Add diced bell peppers, zucchini, and corn kernels to the pot. Cook for another 5 minutes, until vegetables are slightly tender.
  3. Stir in diced tomatoes, beans, vegetable broth, chili powder, cumin, salt, and pepper. Bring the chili to a simmer.
  4. Reduce heat to low and let the chili simmer, uncovered, for about 30 minutes, stirring occasionally, until the flavors have melded and the chili has thickened.
