Pancetta, Eggs, Parmesan – Crafting the Perfect Pasta Carbonara

Pasta Carbonara is a rich and indulgent Italian dish that’s sure to impress. This recipe features spaghetti tossed in a creamy sauce made with eggs, Parmesan cheese, and crispy pancetta, creating a decadent and satisfying meal that’s perfect for pasta lovers.

  • 8 oz spaghetti or fettuccine pasta
  • 4 oz pancetta or bacon, diced
  • 2 cloves garlic, minced
  • 2 large eggs
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley for garnish

  1. Cook pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta and set aside.
  2. In a large skillet, cook diced pancetta over medium heat until crispy and golden brown, about 5-7 minutes. Add minced garlic to the skillet and cook for another minute until fragrant. Remove from heat.
  3. In a bowl, whisk together eggs, grated Parmesan cheese, salt, and pepper.
  4. Return the skillet with the cooked pancetta and garlic to low heat. Add cooked pasta to the skillet and toss to coat in the pancetta drippings.
  5. Quickly pour the egg and Parmesan mixture over the pasta, tossing continuously to coat the pasta evenly. The heat from the pasta will cook the eggs and create a creamy sauce. If the sauce seems too thick, add a splash of reserved pasta water to loosen it up.
  6. Season Pasta Carbonara with additional salt and pepper to taste. Garnish with fresh parsley before serving.
  7. Serve hot and enjoy this creamy and indulgent Italian pasta!
